Homemade Hamburger Helper

Ingredients:
- 2 tablespoons extra-virgin olive oil
- 1 large yellow onion cut into 1/2-inch dice
- 3 medium carrots scrubbed and cut into 1/4-inch dice
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 3 garlic cloves minced (about 1 tablespoon)
- 1 pound lean ground beef (I used 93% lean)
- 2 to 3 teaspoons hot sauce
- 1 teaspoon Dijon mustard
- 2 teaspoons smoked paprika
- 1 (14-ounce) can reduced sodium beef broth
- 2 cups water plus additional as needed
- 8 ounces whole wheat elbow pasta
- 1/2 cup plain nonfat Greek yogurt
- 1 1/2 cups grated sharp cheddar cheese
- 1/4 cup chopped chives divided (optional)
