Buffalo Popcorn Chicken
Who can resist perfectly crispy popcorn chicken? Not me! Now couple that with some hot sauce and a phenomenal homemade blue cheese dressing for some Buffalo popcorn chicken and you’ve got a meal that will make your taste buds sing!
Popcorn chicken is a dish that was developed by KFC in the 1990’s and consists of bite-sized pieces of chicken breast that is breaded and fried, making it perfect for popping right into your mouth. Its popularity has since spread far and wide. Wonderfully crispy on the outside and soft and tender on the inside, these bite-sized delights are perfect for entertaining, for game night, and for any time in between. And I’m sharing my recipe for Buffalo Popcorn Chicken with you which adds some extra flavor and fiery kick that’s tempered by an incredibly creamy, flavorful homemade blue cheese dressing.
- 2 large boneless skinless chicken breasts , cut into bite-sized pieces
- 2 tablespoons Frank's Red Hot Sauce or similar, use more or less depending on heat preference
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 2 teaspoons salt
- 1/2 teaspoon sugar
- 1 teaspoon garlic powder
- 3/4 teaspoon onion powder
- 1/2 cup buttermilk
- 1/2 cup water
- 4 tablespoons Frank's Red Hot Sauce, or hot sauce of choice, use more or less depending on heat preference
- 2 teaspoons white vinegar
- 1/2 cup flour mixed with 2 teaspoons cornstarch , for dredging
- Celery sticks
- 3 ounces blue cheese (use a wedge, not pre-crumbled)
- 1/3 cup quality mayonnaise
- 1/3 cup sour cream
- 1/3 cup buttermilk (use less if you want it thicker for a dip)
- 2 tablespoon heavy cream (omit if you want it thicker for a dip)
- 2 teaspoons freshly squeezed lemon juice
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon dry mustard
- 1 tablespoon chopped fresh parsley or chives
- 1/8 teaspoon freshly ground black pepper
- 1/4 teaspoon salt
