Goat’s Cheese Tart With Strawberries

Ingredients:
- 1 Granny Smith apple, finely grated
- 1 kg strawberries, hulled
- Juice of 1 lemon
- 350 gm caster sugar, plus 55gm (¼ cup) extra
- 2 eggs, at room temperature, separated
- 200 gm soft goat’s cheese
- Scraped seeds of 1 vanilla bean
- 200 gm double cream
- Finely grated zest of 1 orange
