Pork Stew

Ingredients:
Seasonings
- 1 teaspoon EACH: dried rosemary, thyme
- ¾ teaspoon EACH: dried oregano, ground sage
- ½ teaspoon EACH: pepper, celery salt
Pork
- 2 ½ lbs. pork butt
- 2 ¼ teaspoons salt
- 3 tablespoons flour
- 2-3 tablespoons olive oil
Stew
- ¾ cup dry white wine
- 3 tablespoons butter
- 1 yellow onion, diced
- 4 medium carrots, diced
- 3 ribs celery, diced
- 4 cloves garlic, minced
- 2 teaspoons Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 teaspoon hot sauce
- 1/3 cup flour
- 5 cups chicken broth
- ½ cup heavy cream
- 1 beef bouillon cube
- 2 bay leaves
- 1 lb. baby red potatoes, I leave the skins on.
- Salt/pepper
