Almond Shortbread Cookies with Orange

A perfectly crisp, buttery cookie that’s not overly sweet but packed with rich almond flavor. This almond shortbread recipe features the rich taste of almond flour and almond extract, complemented by a hint of citrus. Tender and full of flavor, these cookies are easy to roll, and cut with a cookie cutter.

For an extra touch, finish with a drizzle of dark chocolate and a sprinkle of toasted almonds. These cookies are as delightful to make as they are to eat. They’re vegetarian and egg free.

Ingredients:
  • 1 1/2 cup + 2 tablespoons (225 grams) Unbleached All Purpose Flour
  • 1/2 cup + 2 tablespoons (76 grams) Super Fine Almond Flour
  • 1 tablespoon Corn Starch
  • 1/4 teaspoon Fine Sea Salt
  • 3/4 cup (170 grams) Unsalted Butter 1 1/2 sticks at room temperature
  • 1/4 cup (55 grams) Cane Sugar
  • 1/3 cup (40 grams) Powdered Sugar
  • 1 1/2 teaspoon Orange Zest packed, from about 1 large orange
  • 1 tablespoon + 1 teaspoon Fresh Orange Juice fresh squeezed
  • 2 teaspoons Pure Almond Extract

For Finishing
  • 3 tablespoons Slivered Almonds
  • 1 3 ounce (85 grams) 70-80% Dark Chocolate Bar chopped small
  • 1/2 teaspoon Coconut Oil solid
