Roasted Beet Hummus

Ingredients:
For the Roasted Beet
- 1 medium red Beet top removed, peeled and cut into 1-inch pieces
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper spinkle of each
For the Hummus
- 1 seasoned roasted beet
- 1 15-ounce can (1 1/2 cups) chickpeas drained and rinsed
- 2 tablespoons tahini
- 2 tablespoons lemon juice
- 1/4 cup olive oil
- 1 cloves fresh garlic diced, OR 1/2 teaspoon garlic powder for a milder flavor
- 1/2 teaspoons ground cumin
- 1/4 teaspoon kosher salt or to taste
- 1/4 teaspoon ground black pepper or to taste
