Cabbage Gratin

This new recipe for Cabbage Gratin is an idea that popped into my head two days ago when I was lying in bed! I wish I had thought of it sooner, but once I had the idea to make a cabbage side dish with a cheesy gratin topping, I knew I had to hurry and get it posted since it's amazing and you need to try it ASAP.
Luckily I had all the ingredients on hand, and my amazingfriend was coming over to cook with me. And we absolutely LOVED this cheesy Cabbage Gratin that’s a relative of similar recipes with broccoli, cauliflower, and Brussels sprouts!
When you will be narrowing down the menu for St. Patrick’s Day, I highly recommend this Cabbage Gratin for a side dish to serve with corned beef. Ingredients:
- 1 medium head cabbage
- 1 T olive oil
- salt and fresh ground black pepper to taste
- 8 T mayo
- 2 T fresh-squeezed lemon juice
- 1/2 tsp. ground thyme
- 2 cups finely grated Swiss cheese
- 1/4 cup coarsely grated Parmesan cheese
