BBQ Shrimp Quinoa Bowls

For the Cheesy Quinoa
- 1 cup uncooked quinoa, rinsed and drained
- 2 cup chicken or vegetable broth or stock
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon dry mustard
- ½ cup plain Greek yogurt
- 1 cup shredded cheddar cheese (about 4 oz)
For the Shrimp and Broccoli
- 1 pound broccoli florets
- 1 ½ pounds raw shrimp, peeled and deveined
- 1 teaspoon olive oil
- ¼ cup barbecue sauce plus additional for serving, if desired
