My Irish nachos are a fun twist on the typical restaurant-fare tortilla chip nachos: crunchy kettle-cooked potato chips are loaded up with hot, fried corned beef strips, some typical nacho vegetable toppings are sprinkled on, and warm homemade beer cheese sauce is drizzled over the top for a fantastic appetizer!

Ingredients:
  • one batch beer cheese sauce
  • 300 grams potato chips plain salted, kettle-cooked
  • 175 grams cooked corned beef deli-style shaved
  • ⅓ cup diced green onions
  • one large tomato diced and drained well
  • ½ cup sliced black olives drained well

Beer Cheese Sauce

  • ¼ cup salted butter
  • ¼ cup all-purpose flour
  • 1 cup whole milk
  • 3/4 cup lager beer
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon dried parsley
  • pinch of cayenne pepper
  • 3 cups shredded sharp cheddar cheese
  • salt and pepper to taste
