- 90 g unsalted butter - melted and cooled
- 2 large eggs - at room temperature
- 115 g caster/superfine sugar
- 1 teaspoon vanilla extract
- 115 g gluten-free plain/all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon sea salt
- 2 teaspoon lemon zest - finely grated
- pure icing/powdered sugar - for dusting, optional
