Easy Raspberry Ice Pops: Healthy & Sweet
Craving a refreshing summer treat? Something sweet, but not too sweet? These easy homemade fruity ice pops are just the ticket. With just a few simple ingredients, these raspberry ice pops are easy to make and healthy! Perfect for a summer treat!
Whenever the weather warms up, or if we just need a fun treat for kids, we love to have homemade popsicles for our afternoon snack. These frozen raspberry & yogurt popsicles are naturally sweetened with berries for a balanced mix of protein, fruit, and fat. I actually make my pops with Greek yogurt and fresh seasonal berries (you can take strawberries if you like), which is easy, nutritious, and inexpensive. They’re creamy and bright in flavor and you can mix them up in about 5 minutes.
Ingredients
1 cup fresh raspberries (or any other berries you like)
1 tbs honey (or maple syrup)
1 pinch of vanilla extract
2 cups plain whole milk Greek yogurt
Directions
Step 1
Place the raspberries in the bowl of a food processor, cover and pulse a few times - or mash raspberries with a fork or potato masher until chunky with only a few bigger pieces remaining.
Step 2
Place the Greek yogurt in a large mixing bowl. Add honey and vanilla extract. Pour the raspberries over the top and gently fold them into the yogurt. Carefully spoon the mixture into a popsicle mold.
Step 3
Freeze until completely solid and set.
Tips:
If you don’t have freezer pop molds, you can use small plastic or paper cups and popsicle wooden sticks.
To easily unmold the popsicles, dip the bottom of the popsicle mold into hot water for a few seconds.
This recipe will make about 8 ice pops, so they’re perfect to make ahead of time for a quick and easy snack during the week.
