Meatball Wild Rice Soup
Cozy meatball soup with wild rice will warm you up on a chilly day. The juicy, tender turkey meatballs cook right in the broth and make this soup extra hearty. Add some garlic toast on the side to soak up every last drop.
Ingredients:
- 2 cups cooked wild rice, divided (see note)
- 1 egg
- 1/3 cup seasoned breadcrumbs
- 1 teaspoon Italian seasoning
- 1 1/2 teaspoon kosher salt, divided
- 1/4 teaspoon ground black pepper
- 1lb ground turkey (see note)
- 1 tablespoon olive oil
- 1/2 cup diced onion
- 1/2 cup diced celery
- 1/2 cup diced carrot
- 1 tablespoon minced garlic (about 3 cloves of garlic)
- 1 (14-oz) can diced fire-roasted tomatoes
- 6 cups chicken or vegetable stock
- Chopped parsley, for garnish
- Grated Parmesan cheese, for garnish
