Pizza Stuffed Potatoes
Who doesn’t love pizza and baked potatoes? When combined, they create a mouth-watering dish that is easy to make, affordable and delicious – Pizza Stuffed Potatoes!
The easiest way to check if a baked potato is ready is to use a fork or a sharp knife to pierce the potato. If the fork or knife easily slides all the way through the potato with little to no resistance, then it is fully cooked and ready to eat. You can also gently squeeze the potato to check for doneness; if it gives easily when you squeeze it, it’s likely done.
I love making a big salad like Winter Citrus Salad or Salad Platter to serve with these. Or you could do a nice Cauliflower Steak!
Ingredients:
4 russet potatoes washed and fork holes poked in each end
1/2 cup pizza sauce or marinara sauce
1 cup mozzarella cheese
Optional toppings: mini pepperonis, olives, peppers, mushrooms, basil, cooked sausage
