INGREDIENTS

  • 1-1/2 cups diced English cucumber

  • 1-3/4 cup fresh sweet corn 
  • 1 medium avocado, diced
  • 1 packet (.75 oz) fresh basil, separated 
  • Optional: 1/2 cup diced red onion, 1/2 cup goat (or feta) cheese
  • DRESSING

  • 1/3 cup each: extra virgin olive oil, lemon juice (plus 1 tsp lemon zest)
  • 1 tablespoon honey
  • 2 teaspoons Dijon mustard
  • 1-1/2 teaspoons minced garlic
