This one-pan Homemade Hamburger Helper features ground beef cooked with macaroni in a rich and creamy sauce with cheese. It’s scrumptious, simple, and cooks entirely in a single skillet, even the pasta!

This is the perfect recipe if you’re looking for simple and delicious. It’s a kid-approved, one pot meal that is just as good leftover as it is hot off the stove.

Ingredients:
  • 2 tablespoons extra-virgin olive oil
  • 1 large yellow onion cut into 1/2-inch dice
  • 3 medium carrots scrubbed and cut into 1/4-inch dice
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 3 garlic cloves minced (about 1 tablespoon)
  • 1 pound lean ground beef (I used 93% lean)
  • 2 to 3 teaspoons hot sauce
  • 1 teaspoon Dijon mustard
  • 2 teaspoons smoked paprika
  • 1 (14-ounce) can reduced sodium beef broth
  • 2 cups water plus additional as needed
  • 8 ounces whole wheat elbow pasta
  • 1/2 cup plain nonfat Greek yogurt
  • 1 1/2 cups grated sharp cheddar cheese
  • 1/4 cup chopped chives divided (optional)
