Beet Hummus

Set out a platter of beet hummus and get ready to impress! It’s pink, vibrant color and irresistible flavors are sure to wow your guests! Not only is this dip gorgeous to look at but it’s also easy to make and filled with amazing nutrition. While classic hummus is one of my favorite snacks, adding beets to the mix really takes it to the next level!

Ingredients:
  • 1 medium beet
  • 1 (15 oz) can chickpeas, drained
  • 1 clove garlic peeled, crushed
  • ¼ cup tahini paste
  • 2 Tablespoons lemon juice
  • 2 Tablespoons olive oil
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon EACH cumin and coriander
  • To garnish: chopped beets, feta, minced parsley or dill
