Ginger Pear Pie

This Ginger Pear Pie is a fresh pear pie baked with a sweet, buttery, ginger-pecan topping.
Pears are not the first fruit you think of putting in an excellent fruit pie. It’s totally underrated though, because fresh pears are fabulous. They are so sweet and delicious, and they make a great filling for pie. Classic apple pie is always a great choice, but fresh pear pie is unique and usually very well received.
Ingredients:
Pie
- 1 pie crust
 - ½ cup water
 - ½ cup dark corn syrup
 - 1 teaspoon freshly squeezed lemon juice
 - ⅛ teaspoon grated lemon zest
 - 3 tablespoons cornstarch
 - ¼ teaspoon ground ginger
 - 4 large Anjou pears (peeled and thinly sliced)
 - 1 tablespoon butter
 
Topping
- ½ cup all purpose flour
 - ¼ cup packed light brown sugar
 - ⅛ teaspoon ground ginger
 - ¼ cup (½ stick) cold butter, cubed
 - ¼ cup chopped pecans
 - vanilla ice cream for serving (optional)
