I developed my White Chicken Chili recipe many years ago because my family and I loved it so much – and it has been our favorite ever since. It’s perfect for a cozy weeknight meal and makes a festive addition to other tailgating favorites on game day. And when you crave the creamy heartiness of chicken chili that even the kids will enjoy, this is the one to make! I make this chili all fall and winter because it is simple to make and such a delicious crowd-pleaser!

Ingredients:
  • 4 medium boneless skinless chicken breasts
  • 4 cups chicken stock or broth
  • 1 clove garlic, minced
  • 1 medium onion, diced
  • 1 (15-ounce) can white beans, drained
  • 1 (4-ounce) can green chiles, with liquids
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon chopped fresh oregano
