Apple Chicken

My oven baked apple chicken is one of my favorite recipes to make in the fall. I roast juicy seasoned chicken breasts with tart apples and soft melty onions to create this flavorful sheet pan meal. A sweet, savory, and slightly tangy mixture of apple juice, chicken stock, and white wine vinegar keeps everything moist as it bakes. This baked chicken with apples is wonderfully delicious, and it’s a fun and healthy autumn dinner idea!
I rely heavily on sheet pan meals during the week because they require so much less prep and cleanup. This sheet pan recipe for apple chicken does require a little more prep work, but I promise, it’s totally worth it. There’s such a great balance of sweet and savory flavors in this dish, and it’s absolutely mouthwatering. Truly one of my favorite fall chicken recipes!
Giving the apples and onions a quick sauté in a little butter and brown sugar adds a wonderful depth and subtle sweetness. While you can just quickly toss the apples and onions in butter and sugar before adding them to the sheet pan, I found while testing that fully dissolving the sugar into melted butter yielded better flavor and texture, and a more even coating. I highly recommend it if you have a few extra minutes.
Ingredients:
- 4 boneless, skinless chicken breasts
- kosher salt (to taste)
- ground black pepper (to taste)
- 2 tablespoons unsalted butter (¼ stick)
- 2 tablespoons brown sugar
- 2 large apples (cored and cut in eighths)
- 2 small onions (quartered)
- ½ cup apple juice
- ¼ cup chicken stock
- 1 tablespoon white wine vinegar
- 1 teaspoon dry mustard
- chopped fresh thyme (optional, for topping)
