This simple marinade of fresh herbs, ground spices, and oil infuses it with a herby flavor that bakes into every bite as it cooks. - 1 tablespoon thinly sliced chives
- 1 tablespoon minced thyme
- 1 1/2 teaspoons garlic powder
- 1 teaspoon salt
- 1 teaspoon onion powder
- 1/2 teaspoon ground coriander
- 1/2 teaspoon black pepper
- 3 tablespoons avocado oil
- 2 (1 1/2" thick) bone-in pork chops
Mustard-Cream Sauce
- 4 1/2 tablespoons unsalted butter divided
- 2 1/2 tablespoons minced shallots
- 2 minced garlic cloves
- 3 tablespoons stone-ground mustard
- 1/4 cup cognac (or brandy)
- 1 cup heavy cream
- salt and pepper to taste
