Irish Lamb Stew

- 3 tablespoons extra virgin olive oil
- 2 pounds lamb cut into chunks
- 3 tablespoons all purpose flour
- 3 large carrots (peeled and cut into thick slices)
- 3 medium onions (peeled and cut into quarters)
- Kosher salt and freshly ground black pepper
- 2 cups lamb or chicken stock (broth)
- 8 medium red or white potatoes (peeled and halved)
- 2 sprigs fresh thyme
