Lemon Curd Cupcakes

Wonderfully lemony, these gorgeous cupcakes are sweet and soft, with a lemon curd center and a lemon cream cheese frosting. All components can be made ahead. Their bright and zesty flavors are perfect for spring celebrations, small weddings, Mother's Day and Easter.

Ingredients:

For the cake:

  • 2 ¾ cups all-purpose or cake flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup unsalted butter, at room temperature
  • 2 cups white sugar
  • 1 tablespoon lemon zest (about 1 lemon)
  • 4 eggs, at room temperature
  • ¾ cup milk, at room temperature
  • ¼ cup fresh lemon juice
  • ½ teaspoon vanilla extract
  • For the lemon curd:

  • ½ cup fresh lemon juice
  • 2 tablespoons unsalted butter
  • 2 eggs
  • 1 egg yolk
  • ½ cup sugar
  • Pinch of salt
  • A few drops of vanilla extract
  • For the cream cheese frosting:

  • 1 teaspoon lemon juice
  • 2 teaspoons lemon zest
  • ½ cup butter, at room temperature
  • 1 cup cream cheese, at room temperature
  • 3 to 4 cups confectioners' sugar
