Ingredients:
- 4 medium sweet potatoes
- 1 teaspoon olive oil or avocado oil, plus more for coating the sweet potatoes
- 1/2 medium onion, chopped (about 1/2 cup)
- 1/2 cup diced carrots
- 1/2 cup diced celery
- 1 pound lean ground chicken
- salt and pepper
- 8 oz. can of tomato sauce

- 2 cups shredded cheddar, Monterey Jack, or Colby Jack cheese, or a combination
