This healthy and refreshing cucumber salsa is one of my favorite things to serve on hot summer days! It has been on repeat in my house for a few weeks now, and I just can’t get enough.
2 large cucumbers, peeled and diced
2 cups diced Roma tomatoes
1 cup diced red onions
⅔ cup chopped cilantro
2 jalapeños, diced
2 cloves garlic, grated or minced
6 tablespoons lime juice (about 2 large limes)
1 tablespoon olive oil
Kosher salt, to taste
Freshly ground black pepper, to taste
