Berry Watermelon Feta Salad

Berry watermelon feta salad — watermelon, strawberries and blueberries are tossed with mint and feta cheese in a honey-lime poppy seed dressing to create this light, refreshing summer salad.

If you’re looking for the perfect summer salad recipe, look no further than this Berry Watermelon Feta Salad.

First, the colors are perfect for summer holidays, like Memorial Day and Independence Day, and this salad features tons of fresh, in-season summer fruit.

I mean, watermelon is basically another word for summer, if you ask me. And it pairs perfectly with the berries, mint and feta cheese.

If you haven’t tried watermelon with feta cheese, trust me, it’s delicious. Crumble goat cheese would be a great substitution in this recipe, if that’s what you prefer, or have on hand.

And it’s all tossed together in a simple honey-lime dressing that’s the perfect accompaniment to the fresh fruit, mint and crumbly cheese.

Ingredients:
  • 3 tablespoons honey
  • 1 tablespoon lime juice
  • 1 teaspoon poppy seeds
  • 6 cups cubed watermelon
  • 2 cups sliced strawberries
  • 1 cup blueberries
  • 1/2 cup crumbled feta cheese
  • 1/3 cup mint leaves torn
  • Pinch of salt

20 minutes
