- 1/2 cup (114g) unsalted butter, cold and cut into cubes

- 1 cup (200g) granulated sugar
- 1/4 cup (31g) all-purpose flour
- 1 tsp vanilla extract
- 2 cups diced rhubarb
- 1/4 cup shredded coconut
