  • 1 garlic clove, halved
  • 1 cup milk, whole or 2%
  • 4 ounces goat cheese
  • 3-4 sprigs fresh thyme
  • ¾ pound white potatoes, peeled and sliced 1/8 inch thick
  • 1 pound sweet potatoes, peeled and sliced 1/8 inch thick
  • 1 ½ Tablespoons olive oil
  • ¾ teaspoon kosher salt
