Raspberry Cream Pie

Summers are so hot here. So horribly, oppressively hot. They're so hot that sometimes the thought of ingesting anything with a temperature higher than 40 degrees makes me want to cry. And I don't like to cry. One scorcher of a summer, I was all set to make an oven-baked pie, but it was just too hot and I wound up whipping up this incredibly easy raspberry cream pie. And I'm so glad I did—it hit the spot beautifully.

This frozen dessert is quick to prepare and uses just a few very simple ingredients. For me, that means less time in the kitchen and more time sitting on the couch, fanning myself, and figuring out which northern state I'm going to start visiting in the summertime because there's no way I can make it through another summer here. This is one of those summer pies that make an excellent dessert for Mother's Day, the 4th of July, or any hot, hot day when you can't seem to cool off.

Ingredients:
  • 25 chocolate sandwich cookies, such as Oreos, plus more crumbs for serving
  • 6 Tbsp. salted butter, melted
  • 1 1/4 cups raspberries, plus more for serving
  • 3 Tbsp. granulated sugar
  • 2 (6-oz.) containers raspberry yogurt
  • 1 (3.4-oz) package instant vanilla pudding mix
  • 1 cup heavy whipping cream
  • Whipped cream, to serve
