Peach Cobbler

I use this easy cobbler recipe whenever I’m having friends over. You can bake it in a large pan or bake individual servings in ramekins. I created this peach cobbler recipe using a few tips from my mom. Because it's so quick and easy to cook, this cobbler can be made in minutes to suit any occasion. I've used it for a breakfast fruit dish, dinner dessert and light snack.

Ingredients

for the dough

1 1⁄3 cups all-purpose flour
2 tablespoons sugar, plus extra for sprinkling
1 1⁄2 teaspoons baking powder

Sea salt to taste

1⁄4 cup vegetable oil or margarine

1⁄2 cup milk, plus extra for brushing (you can use soy, almond, or rice milk)

for the filling

1⁄2 cup sugar

2 tablespoons all-purpose flour

1 teaspoon ground cinnamon

5 fresh peaches, peeled, pitted, and sliced

Directions

Step 1

In a medium bowl, whisk together flour, sugar, baking powder, and salt. In a separate small bowl, whisk the oil and nondairy milk, and add it to the flour mixture.

Step 2

Mix with a wooden spoon until combined and it is sticky and doughy. Do not overmix.

Step 3

To prepare the fruit filling: in a medium bowl, whisk together sugar, flour, and cinnamon. Add peaches and toss with a large spoon until the fruit is coated with the sugar mixture.

Step 4

Preheat the oven to 375 F. Pour the peaches into an 8- or 9-inch baking pan or distribute evenly into 6 ramekins. Using a tablespoon, scoop lumps of dough on top of the peaches. Brush the top of the dough with nondairy milk and generously sprinkle with sugar.

Step 5

Bake for 45 minutes or until dough is thoroughly cooked and lightly browned on top. Be sure to rotate after 20 minutes, so that it bakes evenly.

Serve warm and with vanilla ice cream or whipped cream.

Sure, you may use 2% milk! I personally prefer non-dairy, but you can use any
