Tomato Soup Pot Pies With Cheddar Puff Pastry

⅔ cup cooking sherry
⅓ cup chicken stock
3 tablespoons brown sugar
½ teaspoon dried basil
¼ teaspoon salt
¼ teaspoon pepper
¾ cup heavy cream
1 sheet puff pastry, thawed if frozen
1 large egg + 1 teaspoon water, beaten together for egg wash
1 ½ cups freshly grated sharp cheddar cheese
