Carrots en Croûte

This filling appetizer stars curry-and honey-roasted carrots wrapped in flaky puff pastry. For best results, look for carrots that are 5 to 6 inches in length. Pre-roasting carrots with curry and thyme balances their natural sweetness with rich, savory flavor, making them a satisfying stand-in for sausages.

Ingredients:
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon honey
  • 1 tablespoon curry powder, plus more for sprinkling
  • 1 teaspoon chopped fresh thyme
  • 12 small to medium carrots, trimmed
  • Flaky sea salt, to taste
  • Black pepper, to taste
  • 1 (8-ounce) frozen puff pastry sheet, thawed
  • All-purpose flour, for work surface

I love new recipes! 

I'm interested in low sugar, low fat, and vegetarian recipes.  

There are a lot of vegetables out there that I really don't know what to do with but I would certainly like to expand my menus.
