Ingredients:

  • 1½ pounds boneless skinless chicken breasts or thighs, cut into bite-size pieces
  • 1½ tablespoons red curry paste
  • 1 tablespoon yellow curry powder
  • 2 tablespoons olive oil divided
  • 1 small onion sliced
  • 3 cloves garlic minced
  • 1 knob ginger 1-inch size, minced
  • 1 red bell pepper sliced
  • 1 tablespoon brown sugar or coconut sugar
  • 13.5 ounces coconut milk 1 can
  • Juice of 1 lime
  • 1 tablespoon cornstarch + 2 tablespoons water
