Ingredients:
- 1½ pounds boneless skinless chicken breasts or thighs, cut into bite-size pieces
- 1½ tablespoons red curry paste
- 1 tablespoon yellow curry powder
- 2 tablespoons olive oil divided
- 1 small onion sliced
- 3 cloves garlic minced
- 1 knob ginger 1-inch size, minced
- 1 red bell pepper sliced
- 1 tablespoon brown sugar or coconut sugar
- 13.5 ounces coconut milk 1 can
- Juice of 1 lime
- 1 tablespoon cornstarch + 2 tablespoons water
