Eton Mess is believed to have originated in the late 19th century at Eton College in England. This easy fruit dessert is perfect for barbecues, picnics, or anytime you need a quick summer treat.

Ingredients:
  • 32 ounces strawberries, hulled (2 pints) divided
  • 1/2 tablespoon sugar
  • 2 tablespoons water
  • 1/2 cup heavy whipping cream, chilled
  • 1 teaspoon vanilla extract
  • 1/2 cup non-fat Greek yogurt
  • 3 1/2 ounces vanilla meringue cookies
