Ingredients:
Banana cupcakes
- 115 grams (1/2 cup or 1 stick) unsalted butter, room temperature
- 90 grams (1/2 cup) brown sugar
- 50 grams (1/4 cup) caster sugar or granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg, room temperature
- 180 grams (3/4 cup) mashed banana, (2–3 overripe bananas)
- 210 grams (1 and 1/2 cups) plain flour or all purpose flour
- 1 and 1/2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 120 ml (1/2 cup) buttermilk
Cream cheese frosting
- 115 grams (1/2 cup or 1 stick) butter, room temperature
- 250 grams (1 and 1/4 cup) full fat cream cheese, room temperature
- 1 teaspoon vanilla extract
- 375 grams (3 cups) icing sugar or powdered sugar, sifted
- Walnuts, crushed, for decorating
