Ingredients:
  • 1 pound meatloaf mix (beef, pork, veal)
  • 1/2 cup unseasoned panko breadcrumbs
  • 1/2 cup fresh grated parmesan cheese, divided
  • 1/4 cup milk
  • 1 large egg
  • 1/4 cup chopped fresh parsley
  • 1 clove garlic, minced
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 8– ounces thin spaghetti
  • 1 (24- ounce) jar marinara sauce
  • 1/2 cup beef broth
  • 1/2 cup grated mozzarella or thinly sliced rounds of fresh mozzarella
  • Optional garnish – chopped fresh parsley and or chopped fresh basil
