⅔ cup dry red wine
14- ounce can fire roasted diced tomatoes

3 cups freshly grated mozzarella or provolone cheese
½ cup grated parmesan cheese, plus more for sprinkling
1 large egg, lightly beaten
½ teaspoon dried basil
½ teaspoon garlic powder
½ teaspoon kosher salt
½ teaspoon pepper
fresh basil or herbs for topping
