This savory pie is a great option for a vegetarian dinner or a holiday gathering. Packed with artichokes, spinach, and feta cheese, it's both flavorful and satisfying. The homemade crust is buttery and flaky, making this pie feel extra special. Serve with a side salad for a complete meal.

Ingredients: For the crust:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, chilled and cut into small pieces
  • 4 to 6 tablespoons ice water

For the filling:

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
  • 1 can (14 ounces) artichoke hearts, drained and chopped
