Slice & Bake Sugar Free Keto Lemon Cookies (Air Fryer, Nut Free)

This easy Air Fryer recipe for Sugar Free Lemon Slice and Bake Cookies is perfect for when you just want a small batch of cookies. It's made gluten free, and nut free without almond flour. Oven directions are also provided. Just 1 gram net carbs per cookie! These sugar-free cookies can also easily be made dairy free with the swap of butter!

Slice and bake cookies are fantastic for those of us who want simple! Simple it is, with this lemon cookie recipe as no rolling out the dough is needed and no using a cookie cutter either.

This easy technique has been around forever and even the novice baker can bake these. I adapted these sugar free lemon cookies from my vanilla wafer recipe that are also slice and bake low-carb cookies.

Roll the cookie dough into a log, refrigerate and slice and bake in your AIR FRYER!! Oven directions are also provided below, but the air fryer is perfect for when you just want to bake a few cookies and not a whole batch.

Ingredients:

½ cup coconut flour

½ cup Swerve granular sweetener

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter softened

1 tablespoon lemon juice

¼ teaspoon lemon extract optional

½ teaspoon vanilla liquid stevia or ⅓ cup more sweetener of choice- optional

2 egg yolks

Icing

3 teaspoon lemon juice

⅔ cup Swerve confectioners sweetener
