My Almond Flour Cake (Torta di Mandorle) is the recipe that you have been waiting for.   • 4 large eggs – separated, at room temperature
  • 80 g (⅓ cup) unsalted butter – melted and cooled
  • 200 g (2 cups) blanched almond flour
  • 160 g (⅔ cup) caster/superfine sugar
  • 1 tablespoon lemon zest – finely grated
  • ¼ teaspoon sea salt
  • ½ teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 60 ml (¼ cup) lemon juice – freshly squeezed

For Serving (optional)
