Carrot Orzo

This easy Carrot Orzo is a simple side dish flavored with carrot juice and cooked like risotto for a beautiful spring dinner.
Alright, time to put away the shamrocks and get ready for bunnies! This year we went to my sister’s house for Easter and I was so excited about spending the day with the kids hiding Easter eggs. My sister was taking care of dessert this year and she had continuously texted me with ideas. Lemon icebox pie and coconut cake were both in the running, and we have even given a carrot cake roll a try! Since she had dessert covered that means I got to play around with a new recipe for Easter dinner. And now I’m pretty excited about this carrot orzo recipe. It’s kind of like risotto but it uses orzo pasta and I love how much carrot-y flavor comes through.
Beautiful isn’t it? I love the rich orange color and the brightness of the lemon and carrot juice. I think it is a perfect side dish for Easter dinner or any other spring day!
Ingredients:
- 2 Tbsp . Lemon juice
- 2 c . Carrot juice
- 2 c . Chicken or Vegetable Broth
- 1 c . Carrot, , finely diced
- 1 c . Onion, , finely diced
- 3 Tbsp . Butter
- 10 oz . Orzo
- 1/2 c . White Wine
- 1/4 tsp . Salt
