Coffee & Walnut Cake
Coffee & Walnut cake is a staple classic in most recipe collections. Our version is made up of three soft layers of sponge, sandwiched and topped with a creamy coffee buttercream, the ideal cake of choice to serve at any coffee morning with friends and family. It is also a favourite for those rainy days when you just want to whip out your apron and bake something yummy.

For the Cake
4oz Butter (unsalted, softened)
14oz Billington's Unrefined Golden Caster Sugar
13oz Allinson's Plain White Flour
1 1/2 tsp Baking powder
1 pinch Salt
12fl oz Milk (plus 1 tbsp extra for mixing with coffee)
2 tbsp Coffee granules
3 Egg(s) (free range)
2 tbsp Maple syrup
4oz Walnuts (chopped)
For the Icing
9oz Butter (unsalted, softened)
1lb 2oz Silver Spoon Icing Sugar
2 tbsp Nielsen-massey coffee extract
A handful Walnuts
