Zucchini Pizza
This recipe is the epitome of feel-good food. First of all, it's pizza—and who doesn't love pizza? The base is creamy labneh, one of the seven must-have Mediterranean ingredients. Along with plenty of mozzarella, it creates a "white pizza" base that's a little lighter and healthier than other versions. The pizza is topped with fresh squash and zucchini, making it the ultimate summer dinner.
Ingredients:
FOR THE WHITE ZUCCHINI PIZZA
- 1 lb. store-bought pizza dough
- 1 small zucchini, thinly sliced
- 1 small summer squash, thinly sliced
- 1/4 tsp. salt
- 1 1/4 c. Labneh
- 2 Tbsp. extra-virgin olive oil
- 4 garlic cloves, minced
- 1 tsp. dried oregano, divided
- 2 c. shredded low-moisture mozzarella cheese
- 1/4 tsp. crushed red pepper

- 32 oz. (about 4 c.) plain whole-milk yogurt
- 1/2 tsp. salt
