- 4 lb boneless center-cut pork loin roast
- 2 tbsp Dijon mustard

- 1 lb mushrooms can use a mix of mushrooms
- 4 oz Gruyere cheese block, grated
- 1/2 tsp dried thyme

- 1/4 cup pan drippings from roasting pork if you have more, use more
