Pecan Pie Shortbread Bars
Pecan Pie Shortbread Bars are a delicious combination of two classic desserts: a buttery shortbread crust topped with a rich, ooey-gooey pecan pie filling! Ingredients:
Toasted Pecans
- 1 ½ cups (163.5 g) pecans
Shortbread
- 1 cup (2 sticks / 227g) unsalted butter, cold
- 1 ¾ cups (219 g) all-purpose flour
- ¼ cup (32 g) cornstarch
- ⅔ cup (150 g) superfine sugar, or caster sugar
- ¼ teaspoon kosher salt
Pecan Pie Topping
- 2 large eggs, room temperature
- ¾ cup (256 g) light corn syrup
- ½ cup (100 g) granulated sugar
- ½ cup (100 g) light brown sugar
- 1 ½ tablespoons unsalted butter, softened
- 1 teaspoon vanilla extract
