It’s a great recipe if you’re craving a hearty soup but don’t want a bunch of leftovers. It makes two generous cups, but you can easily double it if you like leftovers or want to serve more people.
Ingredients:
- 1 tablespoon olive oil
- 1/2 cup chopped red onion
- 3 large cloves of garlic, minced
- 1 teaspoon taco seasoning
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 2 1/4 cups low-sodium chicken broth
- 1 (14-oz) can low-sodium black beans, drained
- Salt, to taste
- Juice of 1/2 a lime
- 1 tablespoon chopped cilantro
- 1 green onion, thinly sliced
- 2 tablespoons crumbled feta cheese
