Crustless Spinach Quiche

Ingredients:
- 1 TBS Unsalted Butter - or Extra Virgin Olive Oil
- 1 small Sweet Onion – small dice (about 1 3/4 cup)
- 2 cloves Garlic – minced
- 1/4 scant tsp EACH: Crushed Red Pepper Flakes & Ground Nutmeg
- 10 ounces Chopped Frozen Spinach – thawed, drained & squeezed dry (can substitute 1 ½ cups Fresh Spinach)
- 12-16 ounces Bacon – cooked and chopped (about 1 ½ cups) (SEE NOTES)
- 1 ¼ Cup Shredded White Cheddar - DIVIDED (4 ounces)
- 1 Cup Shredded Gruyere - DIVIDED (3 ounces)
- 5 large Eggs
- ¾ Cup Half-and-Half (or Whole Milk, Heavy Cream)
- 1 heaping tsp Dijon Mustard
- Kosher Salt & Ground Black Pepper
- Optional Garnish: Lemon Wedges, Grated Parmesan, Fresh Scallions, Dill or Parsley
