Easy Spicy Roasted Almonds with Rosemary

There’s something irresistible about spiced roasted nuts. They’re crunchy, savoury, and just the right balance of sweet, salty, and spicy. These spicy roasted almonds with rosemary are one of my favourite snacks to make at home. They’re perfect for nibbling with drinks, adding to a cheese board, or packing into jars as a thoughtful homemade gift. Be warned, they are highly addictive.
The maple syrup and sugar give the almonds a light glaze, which crisps up when they cool. The smoked paprika, cumin, coriander, and rosemary add depth and warmth. Best of all, they take less than half an hour to make from start to finish.
Ingredients:
- 2 cups raw whole almonds
- 1 tsp extra virgin olive oil
- 2 Tbsp maple syrup
- ¾ tsp Spanish smoked paprika
- 1 Tbsp finely chopped fresh rosemary make it a llittle heaped
- ¾ tsp ground cumin freshly ground if possible
- ¼ tsp ground coriander freshly ground if possible
- ¾ tsp fine salt
