Ingredients:

  • 1.5 cups uncooked long-grain white rice
  • 4 tablespoons sesame oil, divided
  • 1 lb lean ground beef, I used 90% lean
  • 1 tablespoon freshly grated ginger
  • 4 cloves garlic, finely minced or pressed
  • 4 tablespoons soy sauce
  • 3 tablespoons rice wine vinegar
  • 2 tablespoons sweetener or coconut sugar
  • 4 teaspoons sriracha
  • 1/4 teaspoon salt & pepper, each
  • 1 cup carrots, julienne style
  • Cucumber slices, for garnish
  • 4 chopped scallions, for garnish
  • Sesame seeds, for garnish
  • sriracha mayo sauce, for garnish
