Parmesan Crusted Carrots

Not all roasted carrots are created equal – these parmesan crusted carrots are in a league of their own! Every time I serve them with dinner, there are never any leftovers.
These parmesan crusted carrots are a spin on my usual parmesan brussels recipe. I figured, if the crispy parmesan tasted so good on brussels sprouts, I could try the same technique on other vegetables! Carrots came to mind, as their natural sweetness makes for a great contrast with the salty sharpness of the parmesan. And after creating this recipe, my assumptions proved correct!
My kids love these parmesan crusted carrots – they're a great way to ensure the veggies you serve are going to get enjoyed.
Ingredients:
- 1 lb medium carrots (sliced into ½ inch rounds)
- 1 tablespoon olive oil
- ½ teaspoon EACH: garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper
- ¾ cup finely grated parmesan cheese (divided)
- 1 tablespoon hot honey (optional)
