Ingredients
Two 12-ounce blocks extra-firm tofu, drained
2 to 3 tablespoons sweet white rice flour (mochiko)
1/2 cup fresh orange juice, from two large oranges
1 tablespoon sambal oelek chili paste
Neutral oil for frying, like grapeseed oil
One 1 1/2 by 1 1/2-inch piece fresh ginger, peeled and cut into matchsticks
4 cloves garlic, thinly sliced
2 teaspoons ground coriander
2 tablespoons white miso paste
Orange slices, optional
Fresh cilantro sprigs
